When you want a warm chocolate cake right now, this protein mug cake is it: one mug, about two minutes total, and 31 grams of protein. The applesauce keeps it moist and the chocolate chips melt into fudgy pockets.

The one rule: undercook it

Whey protein sets fast in the microwave. The difference between fudgy and rubbery is about 15 seconds. Start with 60 seconds, look at the center, and stop as soon as it no longer looks wet. It keeps cooking from residual heat while it rests.

Serving ideas

  • A spoon of plain Greek yogurt on top adds a cool, tangy contrast and 3 more grams of protein.
  • A few raspberries cut the richness.
  • For an extra-fudgy center, drop a teaspoon of peanut butter into the middle of the batter before cooking.

Ingredients

Instructions

  1. In a large microwave-safe mug, stir together the protein powder, cocoa, oat flour and baking powder.
  2. Add the egg white, applesauce and maple syrup. Stir until there are no dry pockets. Push half the chocolate chips into the batter and scatter the rest on top.
  3. Microwave on high for 60 seconds. Check the center: it should look just set and slightly glossy. Add 10-second bursts if needed.
  4. Let it rest for 1 minute before eating. It firms up as it cools.

Notes

  • Overcooking is what makes protein mug cakes rubbery. Stop as soon as the center is set.
  • Microwave power varies. A 1100-watt microwave usually needs 60 to 70 seconds.

    Questions people ask

Why is my protein mug cake rubbery?

It was cooked too long. Whey protein firms up fast. Pull it when the center still looks a little moist and let it rest for a minute.

    Can I use plant protein?

Yes, but plant proteins absorb more liquid. Add 1 to 2 tbsp milk so the batter is thick but stirrable.
