This is the flatbread that went viral for a reason: two ingredients you probably have, a blender, and a sheet pan. It bakes into a thin, flexible wrap with 19 grams of protein per half and almost no carbs.

Getting it right

The two mistakes are spreading it too thick and pulling it out too early. Aim for a thin layer, about 1/8 inch, with no gaps. Bake until the center is fully golden and dry. It will feel slightly firm when hot and turn flexible as it cools.

How to use it

  • Wrap: fill with turkey, spinach and mustard and roll it up.
  • Pizza base: bake, top with sauce and mozzarella, and broil for 3 minutes.
  • Sandwich bread: cut into squares and use in place of bread slices.

For a bigger lunch, fill a whole flatbread with a cup of our Greek yogurt chicken salad.

Ingredients

Instructions

  1. Heat the oven to 350°F (175°C). Line a sheet pan with parchment paper and lightly spray it.
  2. Blend the cottage cheese and eggs until completely smooth, about 30 seconds.
  3. Pour onto the parchment and spread into a thin, even rectangle about 10 by 12 inches. Sprinkle with the seasoning and pepper.
  4. Bake for 30 to 40 minutes, until golden all over and dry to the touch in the center. Thin spots brown first, so rotate the pan halfway through.
  5. Cool for 10 minutes on the pan. Peel from the parchment and cut in half.

Notes

  • If it is soft or sticky in the middle, bake 5 minutes longer. Underbaked flatbread tears.
  • Wrap in parchment and refrigerate up to 4 days. Warm in a dry skillet for 30 seconds per side.
